Honey Aged Rum

This special release Honey Aged Rum has aged in an ex-Bourbon, then ex-Jamaican Rum barrel. We coated in the inside with Leatherwood Honey from our great friends at Blue Hills Honey (Mawbanna, NW Tasmania). Being a 100L barrel, this special release will have limited bottle available.

Tasmanian researchers have discovered 12 previously unknown compounds in Tasmania's famous leatherwood honey.

It identified the natural compounds responsible for the honey’s distinctive sweet, floral and earthy flavour that commands premium prices worldwide.

The newly discovered compounds include vanillic acid, lumichrome and lumiflavin. Several have proven antioxidant, antimicrobial and anti-inflammatory properties.

Hand crafted and small batch distilled with pristine Tasmanian water in an environment of the freshest of fresh air on the planet. Island Coast Rum is double distilled from fermented raw sugar cane juice and molasses.
